Easy cheese loaf

This cheese bread is soft, flavourful, and packed with a blend of cheddar, mozzarella, and Parmesan. Infused with herbs and garlic, it makes the perfect side dish, snack, or companion to soups and salads. Best of all, it’s a no-yeast, beginner-friendly recipe that comes together quickly with simple ingredients.
 
2 cups all-purpose flour 
1 tablespoon baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon salt 
1/2 teaspoon garlic powder 
1/2 teaspoon dried oregano 
1/2 teaspoon dried thyme 
1 cup shredded cheddar cheese 
1/2 cup shredded mozzarella cheese 
1/2 cup grated Parmesan cheese 
1 1/4 cups buttermilk 
1/4 cup unsalted butter, melted 
2 large eggs 
 
Preheat the oven: Set the oven to 350°F (175°C) and grease a standard loaf pan to prevent sticking. Mix the dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, garlic powder, oregano, and thyme to evenly distribute the leavening agents and spices. Incorporate the cheeses: Add the shredded cheddar, mozzarella, and Parmesan to the dry mixture, tossing them gently so they are evenly coated with flour, which helps prevent clumping. Prepare the wet ingredients: In a separate bowl, whisk together the buttermilk, melted butter, and eggs until smooth, ensuring the butter has cooled slightly to prevent cooking the eggs. Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients and mix gently with a spatula or wooden spoon until just combined; avoid overmixing to keep the bread tender. Transfer to the loaf pan: Spread the batter evenly into the greased loaf pan, smoothing the top to ensure even baking. Bake the bread: Place the pan in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted in the centre comes out clean with no wet batter. Cool before slicing: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely, allowing the flavours to settle and the texture to firm up. Serve and enjoy: Slice and serve warm or at room temperature as a side dish, snack, or accompaniment to your favourite meal. 
 
NOTES For a spicier version, add chopped jalapeƱos or a pinch of red pepper flakes.You can substitute whole wheat flour for part of the all-purpose flour for a heartier loaf. If the bread browns too quickly on top, cover it loosely with foil during the last 10 minutes of baking Reheat slices in a toaster oven or microwave for a fresh-from-the-oven taste.
