Ginger Cookies made with bacon fat

1 cup Bacon fat
1/2 cup butter softened
2 cups sugar
2 eggs
1/2 cup molasses
4 cups flour
2 tsp baking soda
2 tsp cinnamon
2 tsp ground ginger
1 tsp ground cloves
2 cups chocolate chips (optional)

Cream together the bacon fat, butter, sugar, eggs and molasses.
Sift together the flour, baking soda and spices. Add to butter mixture. Add chocolate chips if desired.

Take 1 tbsp of the dough and roll into balls. Roll balls in sugar. Place 3 inches apart on cookie sheet. Bake at 325 for 9 mins.
Makes about 5 dozen cookies
