English muffins

1 1/4 cups warm water

2 tsp honey

1 tsp yeast

2 tbsp melted butter

2 3/4 cups flour

1 tsp salt

Cornmeal, for dusting

In a bowl combine water, honey, & yeast. Let sit & foam for 10 minutes. Add in the rest of the ingredients and combine. Once combined, drop dough onto floured surface & knead for 5 minute adding more flour as needed to make the dough not stick to countertop. Shape dough into ball and place into a bowl. Cover & let rise for 1 hour. sprinkle a few tablespoons of cornmeal on parchment paper. Once dough is doubled, divide into 10 equal pieces. Shape each piece into a ball. Place the balls onto the prepared parchment and press them into flattish rounds. Sprinkle more cornmeal over the tops of the rolls. Cover & let rise 20 minutes. Heat a large frying pan or skillet and grease. Place muffins into pan, cover, & cook on low heat for 9 mins on first side. Flip and cook for about 5 more minutes, or until the second side is also golden and toasted.
