(just like Timmy's)
4 eggs
1 can pumpkin puree (15 ounces)
3/4 cup melted butter and 3/4 cup oil
2 teaspoons vanilla
2 tablespoons molasses
3 cups flour
1 cup brown sugar
1 cup white sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 tablespoon cinnamon
2 teaspoons ground ginger
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon salt
Preheat the oven to 375º. Combine all of the dry ingredients in a medium
bowl. Beat the eggs, sugar, pumpkin, butter and oil until smooth. Pour the
pumpkin mixture into the dry ingredients and mix well. Grease a muffin tin or
fill your tin with cupcake papers. Sprinkle pumpkin seeds on top. Bake for 25 minutes. (Maybe longer?) Cool 5
minutes and then complete the cooling process on a wire rack.
You can make a cream cheese icing and insert in the middle like Tim’s after
they cool down a bit.
