Easy Chicken Parmesan Crisp


1 cup of mayonnaise
3/4 cup of grated Parmesan
1/2 cup "Italian" bread crumbs 
4 skinless boneless chicken breasts spilt in half (or pounded thin)

(I also sometimes add 1 tsp curry powder and/or plain bread crumbs or 20 -30 crushed Ritz crackers for a different flavour)

1. Preheat oven to 425 degrees.
2. Mix mayonnaise and Parmesan.
3. Place chicken breasts in a 9x13 lasagna pan.
4. Spread mayo and cheese mixture over chicken breasts, then sprinkle on bread crumbs.
5. Bake for 20-25 minutes.

Note: Sometimes I add 1/4 cup sour cream with the mayonnaise and cheese because it makes the sauce go farther and gives it a slightly different taste.k
